Best gluten free chocolate cake, hands down July 20, 2010

Since my diagnosis of celiac disease, my family and I have tried several gluten free cake mixes, all of them ranging from "yuck" and "at least it's cake" to "mildly disappointing." Pamela's cake is the best, no question. Not only is it free of dairy and soy (along with wheat, I cannot digest legumes, and many gluten free products seem to rely on bean flour), but it makes TWO layers of cake. Compare that to Betty Crocker, who, bless her heart, tried to introduce a gluten free cake mix, only to have it make one measly layer.
With one bag of Pamela's cake mix, you can make a two layer birthday cake for your favorite person with celiac. This cake is so moist, and yes, the texture does change a bit over sitting, but we like our cakes denser, not so fluffy they flop around on our forks. Usually I'm more a fan of the frosting than the cake, but this is a cake you could serve without frosting.
Also, it's easy to make. My husband and kids made this without any practice, and they are not experienced gluten free bakers. It's easy as pie. Or cake. We'll be trying the vanilla variety very soon!

Made the chocolate cake mix for our little guy who has severe food allergies & intolerances.
I used flax seed & boiling water as the egg replacer, olive oil, and added a few handfulls of craisins. Made 24 cupcakes which were so delicious my "typical diet" family members were snitching tastes!

This is a dense moist wonderful cake mix! There are several recipe variations on the package. I usually make the one with the sour cream. I also add 1/4 cup sugar to sweeten it up a bit. The key is to gently beat the mix together, don't over mix! By far the most dense fabulous rich chocolatey yummy cake ever.
I don't know what the 1 star folks are talking about. This cake is SO good! You won't realize it's wheat free. Really.

Over 11 years of gluten-free baking, this mix is the best chocolate cake mix that I've tried. I usually find other gluten-free cake mixes to be pretty dry. This one made very moist cupcakes with great chocolate flavor - I don't think I'd be able to tell the difference between this and a cake made with wheat flour. And they were easy to frost - no stray crumbs sticking to the frosting spatula. I will definitely buy this one again.

Pamela's Products Gluten Free Chocolate Cake mix is the best chocolate cake you will ever taste. I make it for me grandchildren's birthdays and special events. Their school keeps these cupcakes in the freezer for them and their gluten free classmates when a party is celebrated with treats. All of their classmates would rather have the GF variety since they tasted the special cupcakes on my granddaughter's birthday.
